Vegetarian Christmas canape recipes

‘Tis the season to party! With Christmas fast approaching this is the time of year we all receive a host of invitations to Christmas gatherings, parties and work dos. On top of that, this year I’ll also be throwing my own pre-Christmas party and helping with the food at the big family Christmas day festivities too.

With so much going on at this time of year and limited time to prepare for these festive gatherings, it's important to have a few failsafe canapés recipes which can be put together with little effort, but are loved by all!

These are my 3 favourite canapé recipes which I always turn too whenever there is a a big gathering on, and they’ve always been really popular. I like these canapés in particular because they are vegetarian and so can be eaten by more of the guests. The use of vegetables instead of meat mean they aren’t too filling, leaving room for Christmas dinner even if guests do over indulge in them!

It’s important that canapés are easy to assemble so that you’re not spending time in the kitchen away from the guests. As these recipes use filo pastry which can be bought ready-made, making the cooking process very quick.

The tart flavours of the caramelised onions combined with the smooth oozing brie is always a delicious combination. Add a glass of chilled Appletiser to the mix you’ve got the perfect pairing. The flavour of the apple in the Appletiser strengthens the sharp flavours in the canapés, awakening the guests’ appetite for more, just as it should be at Christmas!

Vegetarian Christmas canape recipes

Caramelised mushroom tartlets

Makes 12 canapés

Ingredients:

  • 4 sheets filo pastry

  • 1 red onion, chopped

  • 1 tbsp sugar

  • 250g chestnut mushrooms, cleaned and thinly sliced

  • 100g grated gruyère

  • Handful of grapes, sliced

Method:

  • Preheat oven to 200 degrees

  • In a pan, heat a splash of olive oil. Once heated, add the chopped red onion, mushrooms and sugar

  • Cook for approximately 15 mins until they are soft and caramelised

  • Cut the pastry into small squares and stack 4 slices in a cupcake tray to make the tartlets. Brush with butter to ensure they stick

  • Add a spoonful of the mushroom and red onion mix to the centre of the tartlets

  • Add some of the grated gruyère on top and garnish with a sliced grape

  • Bake for 10 mins until golden

Cranberry and Brie Christmas crackers

Makes 8 twists

Ingredients:

  • 6 sheets filo pastry

  • 50g butter, melted

  • 125g brie, cut into pieces

  • Cranberry sauce

  • 25g walnuts, roughly chopped

  • Sprinkling of poppy seeds

Method:

  • Preheat oven to 200 degrees

  • Stack two of the filo sheets with a smallest edge facing you, brush with some melted butter to ensure they stick together.

  • At the edge closest to you, spread some cranberry sauce, add a few chunks of brie and sprinkle some walnuts on top

  • Start to roll the filo pastry, encasing the filling, add butter as you go

  • Grab the ends to add twist so the pasty looks like Christmas crackers

  • Paste butter on top and sprinkle poppy seeds

  • Bake for 10 mins until golden

Brie, red onion and rosemary tarts

Makes 12 tarts

Ingredients:

  • 6 sheets filo pastry

  • 50g butter, melted

  • 125g brie, cut into pieces

  • Onion marmalade

  • Rosemary for garnish

Method

  • Preheat oven to 200 degrees

  • Cut the pastry into large squares the size of the cupcake mould

  • Stack 4 slices in a cupcake tray to make the tarts. Brush with utter to ensure they stick together

  • Add a spoonful of onion marmalade to each tart, then add the chunks of brie on top

  • Bake for 10 minutes until golden

  • Garnish with rosemary

The canapés are be prepared in advanced and cooked in the oven when they are required. Serve with chilled Appletiser and get the party started!
